Green Tea Cookies with Nutella Filling

Green tea dessert is definitely one of my favorites and these sandwich cookies are just amazing! Green tea with nutella is such a nice match, but you can also make your own chocolate ganache or any other cookies filling that you like.

Green Tea Sandwich Cookies

Ingredients:
1 1/2 tbsp green tea powder
10  tbsp unsalted butter, soften at room temperature
1 3/4 cup all purpose flour
3 egg yolks
1/2 cup confectioner sugar
Nutella (as much as you want!)

**I reduce the sugar amount for this recipe because the nutella filling is sweet enough for a sandwich cookie. So if you just want the plain green tea cookie without any chocolate filling, I would recommend you to change the sugar amount to 1 cup**


Step 1:  Mix the sugar and green tea butter. Add the butter and mix it until the mixture is light and fluffy.

Step 2:  Mix in the egg yolk, then stir in the flour until the dough comes together.

Step 3:  Put the dough in freezer for 15 minutes or until it is firm enough to work with. At the same time, preheat oven to 350F

Step 4:  Roll the cookie dough out to about half inch thick. Use your favorite cookie cutter to start cutting out the cookies.

Step 5:  Bake the cookies for 12-15 minutes.

Step 6:  Let cool and spread the nutella filling to make sandwich cookies.
