Mini Apple Pie (using puff pastry)

I always have frozen puff pastry at my fridge because they are just great for sweet or savory dishes. When every time I am feeling a little lazy that I want to bake but don't want to deal with the flour mixture, I always use the puff pastry.

This mini apple pie will be a great snack for parties and friend gatherings. A quick recipe that you probably have all the ingredients on hands already. So let's try it!

Mini Apple Pies

Ingredients:
Frozen puff pastry sheet
2 Apples (cut into small pieces)
5 tbsp sugar
1 tbsp dark brown sugar
1/4 tsp cinnamon powder
150ml water
1 tbsp unsalted butter
1 egg yolk (for brushing)



Step 1:  Thaw the puff pastry at room temperature for 40 minutes or until it is soft enough to handle. Preheat oven to 400F.

Step 2:  Heat the frying pan with unsalted butter until melted, then add the apple pieces and mix well. Add the water, cinnamon powder, sugar, brown sugar and keep stirring. Once it gets boiled, turn to low-medium heat and cook for 20- 25 minutes.

Step 3:  When the apples are soft enough. You can taste it and add more sugar if it is too sour, you can also add more water to adjust the consistency of the apple filling. Turn off the heat and let it cool down a little.

Step 4: Roll out the puff pastry sheet and cut into 6 pieces (depends on how big you want you pie be), place the apple filling in the middle and seal all 4 sides by pressing with the folk.

Step 5: Use a knife to cut a few stripes on the apple pie to let the air out while baking. Brush the pie with egg yolk and bake for 12- 15 minutes until golden brown.

Lastly, you can decorate the pie with icing sugar or melted chocolate. Enjoy!
