Simple Chicken Teriyaki with Soft Boiled Egg

Another quick and easy recipe to try! Some people like to make their own teriyaki sauce, but to be honest, sometimes I just want to make a super quick dinner when I am tired after work. So here is the easiest way to do it, hope you guys will like it :)

Chicken Teriyaki with Soft Boiled Egg

Ingredients:
1 lb of chicken breast
Japanese mushroom (Optional)
Green onion (Optional)
Kikkoman Teriiyaki Takumi Sauce

Step 1: Wash the chicken and mushroom. Cut the chicken into small pieces.

Step 2: Heat oil in pan, stir fry the chicken at high heat. Then add the mushroom and keep stir fry until they are fully cooked.

Step 3: The mushroom may release a lot of water, you should drain the cooked chicken and mushroom first then put them back to the pan. (You don't want any excess water to mix with sauce)

Step 4: Add the teriyaki sauce to the chicken and mushroom, let it simmer for a few minutes at low heat.

Step 5: Once you see the sauce starts bubbling, then they are ready to be served with rice. You can also sprinkle some chopped green onions on top.

Make a Soft Boiled Egg:
Bring a pot of water to boil, add the egg and cook for 6 minutes. Then put the egg in ice water to let it cool.

**It usually takes 12 minutes to fully cook an egg. So for 6 minutes, you will get an egg with gooey yolk which is delicious!

Curry Pork Burger

If you like Japanese style curry and burger, then this is the recipe for you. Great for lunch and I always love to eat it with some fried potatoes. If you like, you can use chicken breast instead of pork.

Curry Pork Burger

Ingredients: (for 2 servings) - 1 sliced tomato
- lettuce
- 1 sliced onion
- 2 hamburger rolls
- 2 pork fillets
- 1 large cube of golden curry sauce mix

Step 1: Tenderize the pork fillet and marinate it with 1 tsp soy sauce, 1 tsp sugar, 1 tsp corn starch and 1/2 beaten egg for 30 minutes

Step 2: Heat oil in pan at high heat, fry the pork until both sides are lightly golden brown. Then turn to medium heat and keep frying until the pork is fully cooked.

Step 3: Brush some butter on the hamburger roll and lightly toast it in the oven (Optional)

Step 4: Heat oil in pan and sautee the onion. Then add 2 Tbsp of hot water and the curry sauce mix. If you want thicker consistency, add more curry mix. If you want thinner consistency. add more hot water.

Step 5: Put the tomatoes, lettuce, pork fillet and the onion on the hamburger roll. Now it is done!

Japanese Curry Katsu Udon

I am a huge fan of japanese food and curry katsu udon is definiely of one of my favorites! It is a quick and easy recipe and you can also make a "baked" katsu if you want to eat more healthy. Trust me, it tastes just like a deep fried one, but it helps you cut off a lot of oil and calories.

Japanese Curry Katsu Udon

Ingredients:: (for 2 servings) - 2 pieces of pork loin
- 1 beaten egg
- Flour
- Japanese style bread crumbs (Panko)
- Carrots
- Potatoes
- 2 packs of Udon
- 3 or 4 pieces of Golden Curry sasuce mix

Step 1: Cook the Udon according to the package instruction. Then rinse the udon in cold water and set aside

Step 2: Marinate the pork loin with salt & pepper

Step 3: Coat the pork loin evenly with flour, then dip it into the beaten egg, coat it with panko lastly

*** You can deep fry the pork loin. For baked version, the only difference is that you have to first pan fry the panko with medium heat until it turns golden brown. Follow step 3, then bake it in a pre-heated oven at 400F for 25 mins ***

Step 4: Cut the potatoes and carrots into little chunks. You can pan fry the potatoes for about 3-5 minutes to prevent them turning all mushy when making the curry sauce

Step 5: Add 4 cups of water, potatoes, carrots, curry mix all into the pot and bring them to boil. Once the potatoes and carrots are fully cooked, you can start adding more water or more curry mix to adjust the thickness of the sauce.

Step 6 : Pour the sauce into the bowl of udon and put the pork, potatoes, carrots on the top. Now it is ready to eat!
