Japanese Curry Katsu Udon

I am a huge fan of japanese food and curry katsu udon is definiely of one of my favorites! It is a quick and easy recipe and you can also make a "baked" katsu if you want to eat more healthy. Trust me, it tastes just like a deep fried one, but it helps you cut off a lot of oil and calories.


Japanese Curry Katsu Udon

Ingredients:: (for 2 servings) - 2 pieces of pork loin
- 1 beaten egg
- Flour
- Japanese style bread crumbs (Panko)
- Carrots
- Potatoes
- 2 packs of Udon
- 3 or 4 pieces of Golden Curry sasuce mix




Step 1: Cook the Udon according to the package instruction. Then rinse the udon in cold water and set aside

Step 2: Marinate the pork loin with salt & pepper

Step 3: Coat the pork loin evenly with flour, then dip it into the beaten egg, coat it with panko lastly



*** You can deep fry the pork loin. For baked version, the only difference is that you have to first pan fry the panko with medium heat until it turns golden brown. Follow step 3, then bake it in a pre-heated oven at 400F for 25 mins ***

Step 4: Cut the potatoes and carrots into little chunks. You can pan fry the potatoes for about 3-5 minutes to prevent them turning all mushy when making the curry sauce

Step 5: Add 4 cups of water, potatoes, carrots, curry mix all into the pot and bring them to boil. Once the potatoes and carrots are fully cooked, you can start adding more water or more curry mix to adjust the thickness of the sauce.

Step 6 : Pour the sauce into the bowl of udon and put the pork, potatoes, carrots on the top. Now it is ready to eat!
